Remember gathering around the campfire to roast marshmallows on a stick to make smores? Now you make a whole batch of these classic melted marshmallow and chocolate treats and you don’t even need a campfire. These Smoked S’mores, grilled in a cast-iron skillet and infused with smoky flavour, taste even better than you remember.
We smoked these S’mores on our Rambler Tabletop Charcoal Grill. You don’t have to use the Rambler, but we highly recommend it. It offers portability with heavy-duty construction, a height-adjustable tray and large air dampers to create the ideal temperature and airflow.

8 jumbo-sized marshmallows 1 (3½ ounce) bar dark chocolate, divided 16 graham crackers, halved Pinch cayenne powder (optional) Handful apple or cherry wood chips

large cast-iron skillet or aluminium pan
Preheat your grill for indirect heat at 350°F. Toss a handful of wood chips onto hot coals for smoking.
Arrange 8 graham cracker halves in the bottom of a large cast-iron skillet or aluminium pan. Top each graham cracker with a piece of dark chocolate, followed by a marshmallow.
Place the skillet or pan on the grate over indirect heat. Close the lid and cook until the marshmallows are golden brown, about 5 minutes.
Remove the pan from your grill and top each marshmallow with the other half of the graham cracker. Serve immediately.
HOT TIP – For a spicy twist, sprinkle a pinch of cayenne powder over each marshmallow.
